There is nothing I like better than a great burger. I think it’s because I don’t typically eat them. I don’t usually go to hamburger joints, or fast food places for that matter. And since I’m always trying to outdo myself in the kitchen by creating different menu items, I don’t make them often. However, that is going to change with this new recipe.
These ranch stuffed burgers are juicy, cheesy, and packed full of flavor. I typically don’t stuff burgers and just use a burger seasoning mix I made up. Boring. This burger consists of my ranch seasoning mix, minced garlic, and an onion slushy.
What I like about making an onion slushy is you can get the flavor of the onion without the consistency of the onion pieces. My oldest son does not like the feel of chopped onions and this onion slushy is perfect. I also do not use a binder like egg and breadcrumbs. Yes I have Worcestershire sauce, but not enough to make the burger watery. The onions are not in chunks, so the meat holds its shape.
To make an onion slushy, finely grate an onion on a grater. I like the box grater as the juice of the onion slides down with the grated puree onion. If you like, you can also place a roughly chopped onion in a food processor and process until the onion is in a puree state.
Cooking the burger in butter, what can I say? Everything tastes better with a little butter.
I kept my burger plain for the picture so that you get to see the nice shape of the burger and the homemade bun.
Until next time, happy creating.
Ranch Stuffed Burgers with 3 Cheeses
by Dina Puleo
Servings: 3 burgers
Prep: 15 minutes
Cook: 12 minutes
11/4 pound ground beef formed into 3 balls
3 teaspoons worcestershire sauce
2 ¼ teaspoons ranch seasoning
3 cloves garlic, minced and separated into 3 mounds
3 teaspoons onion slushy- see note
Shredded mozzarella, about ¼ cup
Shredded monterey jack, about ¼ cup
2 tablespoons butter
3 slices swiss cheese
3 hamburger buns
Condiments and vegetables (mustard, ketchup, tomato, lettuce….)
Preheat oven to 350.
Make a well in the balls of ground beef. For each well add 1 teaspoon worcestershire sauce, ¾ teaspoon ranch seasoning, 1 mound of minced garlic, and 1 teaspoon of onion slush. Fold in ball and combine just until ingredients are incorporated into the beef.
Divide each ball and flatten into two disk (Will have a total of 6 disks). In the middle of one burger place a little mound of mozzarella and monterey jack cheese. Place on top of the cheese the other flattened disk. Seal all around the burger by pressing the edges.
Heat an ovenproof heavy skillet over medium high heat. Add the 2 tablespoons of butter. When butter is melted add the 3-formed burgers. Cook on one side for 3-4 minutes. Flip over and place skillet in oven and cook for another 3-4 minutes.
When at desired cook temperature, place a slice of swiss cheese on top of each burger and place back in oven to melt the cheese.
When cheese is melted, place burgers on the hamburger buns and add condiments and vegetables of your choice.
