My oldest son, Jack, and his fiancé, Bianca, were coming over to the house yesterday afternoon. I hadn’t been in the kitchen creating for weeks. I have been trying to find my passion, but it seemed it would never come back. Since Michael’s death, it’s been hard to concentrate, so trying to be creative just wasn’t happening. That is until yesterday. Jack and Bianca sparked a little ember into being and although my new creation, Cast Iron Pizza Potatoes, is on a relatively small scale of my creativity, it does bring home to mind comfort food. And comfort is what I am all about right now.
I wanted this recipe to be very straightforward and easy. It’s something that can be put together quickly, though takes a little time to cook. I used jar pizza sauce and already cooked crumbles to spend less time prepping and more time enjoying the company of my family. Since I didn’t make pizza dough and instead just sliced a few potatoes, it saved more time in the prepping arena.
Cast Iron Pizza Potatoes is reminiscent of scalloped potatoes, but a whole different flavor. I know we enjoyed them last night as we sat around the table and told stories. Now, as my passion is sparked, I am fanning that ember in hopes that the fire catches on.

Cast Iron Pizza Potatoes

Cook 45-50 minutes
Olive oil for greasing the pan
1 clove garlic, smashed
2 lb baking potatoes, peeled and sliced 1/8 inch thick
½ tsp salt, divided
black pepper, to taste
2 cup cooked sausage crumbles
6 ounces pepperoni slices
½ cup sliced black olives
2 cups pizza sauce
1 cup mozzarella cheese, shredded
1 cup 3 cheese (sharp, mild cheddar & Fontina) shredded cheese, shredded
1⁄4 cup parmesan cheese, grated
Preheat oven to 425.
Add olive oil to large cast iron skillet (or any heavy ovenproof skillet). Take a brush and brush bottom and sides of cast iron with the oil. Rub garlic all inside of skillet.
Heat the skillet over medium-high heat. Add half of the potatoes, spreading them out. Sprinkle with ¼ teaspoon salt, black pepper (to taste), 1 cup of sausage crumbles, 3 ounces of pepperoni, ¼ cup of black olives, and 1 cup of pizza sauce. On top of pizza sauce sprinkle ½ of the mozzarella and the 3 cheese. Arrange remaining potatoes on top of the cheese. Season with ¼ teaspoon salt and black pepper, to taste. Add remaining sausage crumbles, pepperoni, olives, pizza sauce and remaining cheese shreds. Cover and heat for 5 minutes. Lift off cover and sprinkle the top with parmesan cheese.
Bake until top is brown, about 40-45 minutes, or until potatoes are done. If the cheese starts to darken too quickly, place a piece of tin foil lightly on top. Let rest for 5-10 minutes. Serve.
