  • 1/3 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 can (6 ounces) large pitted black olives

Instructions

  1. Hard-boil the eggs: Place 12 eggs in a single layer in a large saucepan. Cover with cold water (about an inch above eggs). Bring to a rolling boil over high heat. Cover, turn off heat, and let sit for exactly 12 minutes.
  2. Prepare ice bath: While eggs cook, fill a large bowl with ice and cold water. Transfer eggs to ice bath using a slotted spoon. Let chill for at least 10 minutes.
  3. Peel the eggs: Gently tap each egg on the counter to crack the shell, roll between palms to loosen, and peel starting from the wider end. Rinse under cool water and pat dry.
  4. Slice eggs in half: Cut each egg lengthwise with a sharp knife. Remove yolks to a mixing bowl. Arrange egg white halves on a serving platter, cut side up.
  5. Make the filling: Add mayonnaise, yellow mustard, white vinegar, salt, and pepper to the yolks. Mash with a fork until completely smooth and creamy (about 2 minutes).
  6. Fill the egg whites: Spoon filling into a piping bag or zip-top bag with corner snipped off. Pipe filling into each egg white half, mounding slightly.
  7. Create olive spiders: Drain olives and pat dry. For each spider, use one whole olive for the body. Slice another olive lengthwise into thin strips for legs. Make 4 small slits on each side of the whole olive and insert leg strips.
  8. Garnish and serve: Place one olive spider on each deviled egg. Sprinkle with paprika. Serve immediately or refrigerate until ready.

Notes

For easier peeling, use eggs that are a week old and add 1 teaspoon of baking soda to the boiling water. You can hard-boil and peel eggs up to 2 days ahead. Olive spiders can be assembled up to 1 day in advance and stored separately. For stable eggs, slice a tiny sliver off the bottom of each egg white half. Pat olives dry before slicing to prevent watery filling.
