  • 2 teaspoons vanilla extract

  • Orange gel food coloring
  • Candy corn (about 5-6 pieces per cupcake)
  • Candy eyes
  • Orange candy melts or orange frosting (for beak)
  • Red candy melts or red frosting (for snood)
  • Mini pretzel sticks (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a mini muffin pan with mini cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and sugar with an electric mixer on medium speed for 3-4 minutes until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Add vanilla extract and beat until combined.
  5. With mixer on low speed, add dry ingredients alternately with milk, starting and ending with dry ingredients. Mix until just combined.
  6. Fill mini muffin cups about two-thirds full. Bake for 12-15 minutes until a toothpick inserted comes out clean.
  7. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For frosting: Beat softened butter until smooth. Gradually add powdered sugar, then heavy cream, vanilla, and salt. Beat on medium-high for 3-4 minutes until fluffy. Add orange gel food coloring and mix until evenly colored.
  9. Pipe or spread orange frosting onto cooled cupcakes to form a rounded dome.
  10. Arrange 5-6 candy corn pieces in a fan pattern at the back of each cupcake for feathers.
  11. Place two candy eyes near the front, pressing gently into frosting.
  12. Pipe a small orange triangle for the beak below the eyes.
  13. Pipe a tiny red teardrop shape above the beak for the snood.
  14. Optional: Chill frosted cupcakes for 15-20 minutes before decorating to help decorations stay in place.
