Instructions

  1. Gently wash strawberries under cool water and pat completely dry with paper towels. Leave green caps and stems on. Let sit on paper towel-lined plate for 10 minutes to ensure dryness.
  2. Pour 1/2 cup champagne into a shallow dish. Place strawberries in a single layer, stem-side up, so berries are submerged about halfway. Soak for exactly 10-15 minutes. Do not exceed.
  3. Remove strawberries from champagne and place on fresh paper towels, stem-side down, to drain. Gently pat tops dry. Let sit for 5 minutes at room temperature.
  4. Chop dark chocolate into small, even pieces. Place in a heatproof bowl with coconut oil. Fill a saucepan with 2 inches of water and bring to a gentle simmer. Place bowl over saucepan, ensuring bottom does not touch water. Stir occasionally until chocolate is smooth and glossy. Remove from heat.
  5. Test chocolate temperature by dipping back of a clean spoon into chocolate; it should feel cool to the touch on your lower lip. If warm, let cool for 1-2 minutes.
  6. Hold a strawberry by the stem and dip into melted chocolate, twisting gently to coat about three-quarters of the berry. Let excess drip off. Place on parchment-lined baking sheet. Repeat with all strawberries. If chocolate thickens, gently reheat over simmering water.
  7. For optional garnish, melt white chocolate using same double boiler method. Use a fork to drizzle over dipped strawberries. Sprinkle with crushed freeze-dried strawberries or edible glitter while chocolate is still wet.
