These soft, pillowy cinnamon sugar apple cider cookies are made with apple cider concentrate for an intense apple flavor. They’re quick, easy, and perfect for any gathering.

  • ¾ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup apple cider concentrate, thawed if frozen
  • ¼ cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until evenly distributed.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until combined. Add apple cider concentrate and mix on low speed until just incorporated.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed in three additions, scraping down the sides as needed. Mix just until no streaks of flour remain.
  6. In a small bowl, stir together ¼ cup sugar and 1 tablespoon cinnamon for the coating.
  7. Using a cookie scoop or tablespoon, scoop portions of dough (about 1.5 tablespoons each). Roll into smooth balls, then roll each ball in the cinnamon sugar mixture until completely coated. Place on prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes, until edges are set and lightly golden. Centers will still look soft.
  9. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

For best results, use apple cider concentrate (not reduced cider) for intense flavor and proper dough consistency. If dough is too sticky, chill for 15-20 minutes. Rotate pans halfway through baking for even browning. Store in an airtight container at room temperature for up to 5 days; freeze baked cookies or dough balls for up to 3 months.
