  • 1.5 pounds boneless skinless chicken thighs
  • ½ cup sun-dried tomatoes in oil, drained and chopped
  • 2 tablespoons olive oil (or oil from sun-dried tomato jar)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 3 cups fresh spinach
  • Fresh basil for garnish (optional)

Instructions

  1. Prep your ingredients first. Dice the onion, mince the garlic, chop the sun-dried tomatoes, and grate the Parmesan.
  2. Heat the olive oil (or reserved sun-dried tomato oil) in a Dutch oven over medium heat. Add the chopped sun-dried tomatoes and sauté for 2-3 minutes until fragrant and starting to caramelize. Remove with a slotted spoon and set aside.
  3. Season the chicken thighs with salt, pepper, oregano, and thyme. In the same pot, cook the chicken thighs for 5-6 minutes per side until golden brown. Work in batches if needed. The chicken doesn’t need to be cooked through yet.
  4. Remove the chicken and set aside on a plate. Add the diced onion to the pot and cook for 4-5 minutes until soft and translucent, scraping up any browned bits. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and bring to a simmer. Return the chicken to the pot along with the sautéed sun-dried tomatoes. Let it simmer gently for 15-20 minutes, uncovered, until the chicken is cooked through and tender.
  6. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  7. Reduce the heat to low and stir in the heavy cream. Add the grated Parmesan cheese and stir until melted and smooth. Taste and adjust seasoning.
  8. Add the fresh spinach and stir until wilted, about 2 minutes.
  9. Serve immediately in warm bowls, garnished with fresh basil and extra Parmesan if desired.

Notes

Don’t skip sautéing the sun-dried tomatoes first—it wakes up their flavor. Reduce heat to low before adding cream to prevent curdling. Shred chicken while still warm for easier handling. Grate your own Parmesan for smooth melting. The soup thickens as it cools, so serve hot. Leftovers taste even better the next day.
