  • 1 large ripe banana
  • Extra banana slices for topping

Instructions

  1. Mash the banana in a small bowl with a fork until mostly smooth with a few small chunks.
  2. In a separate bowl or directly in your jar, combine rolled oats, milk, Greek yogurt, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Stir until well combined.
  3. Spoon half of the mashed banana into the bottom of each jar.
  4. Divide the oat mixture evenly between the two jars, pouring it over the banana layer. Gently stir to slightly incorporate the banana.
  5. In a small bowl, combine peanut butter and 1 tablespoon maple syrup. Microwave for 15 seconds or stir until smooth and drizzle-able.
  6. Spoon the peanut butter mixture over the top of each jar, then use a knife or skewer to gently swirl it through the oats.
  7. Seal the jars and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  8. In the morning, stir the oats. If too thick, stir in a splash of milk. Top with fresh banana slices, extra peanut butter, and any other desired toppings. Serve cold or microwave for 30-45 seconds if desired.
