Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment with butter or cooking spray.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl halfway through.
  3. Beat in the cream cheese until smooth and well combined, about 1 minute. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed or folding gently with a spatula until just combined. Do not overmix.
  6. Gently fold in the dried cranberries and 1/2 cup white chocolate chips with a spatula until evenly distributed.
  7. Spread the batter evenly into the prepared pan, smoothing the top. Bake for 22-25 minutes, until edges are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Place the pan on a wire cooling rack and let the bars cool completely in the pan.
  9. Once cool, melt the remaining 1/2 cup white chocolate chips and coconut oil together in a microwave-safe bowl. Microwave in 15-second intervals, stirring after each, until smooth and completely melted (about 45-60 seconds total).
  10. Using a fork or small piping bag, drizzle the melted white chocolate over the cooled bars in a zigzag pattern. Let the chocolate set at room temperature for 20-30 minutes, or refrigerate for 10 minutes.
  11. Lift the bars out of the pan using the parchment paper handles. Place on a cutting board and cut into 16 squares with a sharp knife, wiping the knife clean between slices.
