A quick and easy holiday mocktail made with cranberry rosemary syrup and sparkling water. This festive, non-alcoholic drink is perfect for parties and looks impressively elegant with minimal effort.

Ingredients

Scale
  • 1 cup fresh or frozen cranberries
  • 1 cup granulated sugar
  • 1 cup water
  • 2–3 sprigs fresh rosemary (plus extra for garnish)
  • 1–2 tablespoons cranberry rosemary syrup per glass
  • 1/2 cup sparkling water or club soda per glass
  • Ice cubes
  • Optional: 1 tablespoon fresh lime juice per glass

Instructions

  1. Make the Cranberry Rosemary Syrup: In a small saucepan, combine 1 cup cranberries, 1 cup sugar, and 1 cup water. Bring to a boil over medium-high heat, stirring occasionally to dissolve the sugar. Once boiling, reduce heat to low and add 2-3 sprigs of fresh rosemary. Let it simmer for about 8-10 minutes, or until the cranberries have burst and the liquid is a deep ruby red.
  2. Strain the Syrup: Remove the saucepan from heat. Let it cool for just a minute. Place a fine-mesh strainer over a glass pitcher or bowl. Pour the mixture through the strainer, pressing gently on the cranberries with a spoon to extract all the liquid. Discard the solids. Let the syrup cool completely.
  3. Chill the Syrup (optional but recommended): Pop the syrup in the fridge for at least 30 minutes if you have time. Cold syrup mixes better with cold sparkling water.
  4. Assemble the Mocktail: Fill your serving glass with ice cubes. Add 1-2 tablespoons of the chilled cranberry rosemary syrup. If using lime juice, add about 1 tablespoon per glass. Give it a quick stir to combine.
  5. Top with Bubbles: Slowly pour 1/2 cup of sparkling water over the syrup mixture. Pour gently to preserve the carbonation. Give it one gentle stir with a long spoon.
  6. Garnish and Serve: Take a fresh sprig of rosemary and gently slap it between your palms to release the oils. Place it in the glass. Add a few fresh cranberries on top for that festive look. Serve immediately while the bubbles are still lively.

Notes

Chill the syrup before using to keep the bubbles lively. For a spiked version, add 1-2 ounces of vodka or gin per glass. The syrup keeps in the fridge for up to 2 weeks. Do not freeze the syrup. For a lower-sugar version, use monk fruit sweetener or allulose.
