This creamy, tangy, and spicy Buffalo chicken dip is the ultimate Friendsgiving appetizer. It comes together in under 30 minutes with simple ingredients, making it a perfect crowd-pleaser that started as a happy kitchen accident.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (about 2 large chicken breasts or 1 rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1/2 cup blue cheese crumbles
  • 1/2 cup Buffalo wing sauce (such as Frank’s RedHot)
  • 1/4 cup ranch dressing
  • 1/4 cup sour cream
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/4 cup chopped green onions
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Shred the chicken if you haven’t already. If using rotisserie chicken, pull the meat off the bones and shred it with two forks into small, bite-sized pieces. Set aside.
  3. Soften the cream cheese in a large mixing bowl. If it’s cold, microwave it in 20-second intervals until soft but not melted.
  4. Add the Buffalo wing sauce, ranch dressing, and sour cream to the cream cheese. Mix with a hand mixer on low speed until smooth and combined. The mixture should be pale orange and creamy with no streaks of white cream cheese.
  5. Fold in the shredded chicken, blue cheese crumbles, and half of the shredded cheddar using a spatula. Mix gently to keep the chicken in nice pieces.
  6. Transfer the mixture to an 8×8 or 9×9 baking dish and spread it into an even layer.
  7. Sprinkle the remaining cheddar evenly over the top.
  8. Bake for 18-22 minutes, or until the dip is bubbly around the edges and the cheese on top is melted and starting to brown in spots. The center should be hot and slightly jiggly.
  9. Let the dip rest for 5 minutes before serving. This allows it to set up so it doesn’t slide off chips.
  10. Garnish with chopped green onions and an extra drizzle of Buffalo sauce if desired. Serve warm with tortilla chips, celery sticks, or crusty bread.

Notes

For best results, let cream cheese come to room temperature before mixing to avoid lumps. Use rotisserie chicken for a time-saving shortcut. Shred your own cheddar cheese for smoother melting. The dip can be assembled a few hours ahead and refrigerated; add 5-7 minutes to baking time if baking from cold. Do not overbake, as the dairy may separate. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days and reheated in the oven or microwave.
