  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract (optional)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 30–36 Andes Creme de Menthe Thins, unwrapped

Instructions

  1. Cream the butter and sugar together in a large mixing bowl on medium speed until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl.
  2. Beat in the egg, vanilla extract, and peppermint extract (if using) until well combined.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  5. Chop 8-10 Andes Mints into small pieces (about 1/4-inch chunks) and gently fold them into the dough with a rubber spatula.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  7. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  8. Using a cookie scoop (1.5 tablespoon size), portion out rounded tablespoons of dough and roll into balls. Place on prepared baking sheets about 2 inches apart.
  9. Bake for 8-10 minutes, until edges are set and tops are slightly cracked. Centers should look slightly underdone.
  10. Immediately after removing from the oven, gently press one whole Andes Mint into the center of each cookie. Let sit for about 30 seconds until the mint starts to melt. Optionally, swirl with a toothpick.
  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chilling the dough is essential to prevent spreading. Press the mint into the cookie while it’s still hot from the oven. For best results, use room temperature ingredients. Cookies taste even better on day two.
