A quick and easy mimosa made with apple cider, champagne, and a cinnamon sugar rim using a maple syrup trick for perfect adhesion. Perfect for cozy evenings and brunch.

  • 4 ounces champagne or sparkling wine (dry brut recommended)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon pure maple syrup
  • Apple slices (for garnish, optional)
  • Ice (optional)

Instructions

  1. In a shallow dish, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. Stir until evenly mixed.
  2. In another shallow dish, pour about 1 tablespoon pure maple syrup.
  3. Dip the rim of a champagne flute into the maple syrup, rotating gently to coat. Let excess drip off.
  4. Immediately dip the wet rim into the cinnamon sugar mixture, pressing gently and rotating for even coverage. Tap off loose sugar.
  5. Add ice cubes to the glass if desired.
  6. Pour 4 ounces apple cider into the glass.
  7. Slowly pour 4 ounces champagne or sparkling wine over the cider, pouring at an angle to preserve bubbles.
  8. Garnish with a thin apple slice or cinnamon stick if desired.
  9. Serve immediately.

Notes

Use cold ingredients for best results. Don’t stir after pouring champagne. The cinnamon sugar rim stays crunchy for about 10-15 minutes. For a non-alcoholic version, substitute champagne with sparkling apple cider or ginger ale.
