This quick and easy stovetop buffalo chicken dip is creamy, tangy, and packed with flavor. Topped with a blue cheese crumble, it’s the perfect crowd-pleaser for game day, parties, or a late-night snack.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 2 cups cooked chicken, shredded
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese
  • 1/4 cup crumbled blue cheese (for topping)
  • 2 tablespoons chopped fresh chives or green onions
  • Optional: a dash of smoked paprika

Instructions

  1. Soften the cream cheese: Take the 8 oz of cream cheese out of the fridge about 20 minutes before starting. If forgotten, microwave on low power for 10-15 seconds until soft but not hot.
  2. Heat the skillet: Place a medium skillet over medium-low heat. Add the softened cream cheese, ranch dressing, and buffalo wing sauce. Stir continuously for 3-4 minutes until smooth and slightly thick, with no lumps.
  3. Add the chicken: Fold in the shredded chicken and stir until every piece is coated. Cook for another 2 minutes until the chicken is heated through and the dip is thick and slightly bubbling around the edges.
  4. Add the cheddar and blue cheese: Reduce heat to low. Stir in the shredded cheddar cheese and 1/2 cup of crumbled blue cheese. Keep stirring for 2-3 minutes until fully melted and silky smooth. If too thick, add a tablespoon of milk or extra ranch dressing.
  5. Taste and adjust: Dip a chip in and taste. Add more buffalo sauce for heat, more blue cheese for tanginess, or a pinch of salt and black pepper as needed.
  6. Top and serve: Transfer the dip to a serving bowl (or keep in the skillet). Sprinkle the remaining 1/4 cup of crumbled blue cheese over the top, followed by chopped chives or green onions. If using, dust with smoked paprika.
  7. Serve immediately: Best hot and fresh. Serve with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best results, use block cream cheese softened naturally, shred your own cheddar, and crumble blue cheese from a block. Keep heat on medium-low to prevent dairy separation. If dip separates, whisk in a tablespoon of cold cream cheese. Can be made ahead and stored in fridge for up to 3 days; reheat gently with a splash of milk.
