A quick and easy green bean and almond skillet that turns a kitchen mistake into a beloved family side dish. Crisp-tender green beans are blistered in butter with toasted almonds and garlic, finished with a squeeze of lemon.

Ingredients

Scale
  • 1 pound (450g) fresh green beans, trimmed
  • 1/3 cup (40g) sliced or slivered almonds
  • 2 tablespoons (28g) unsalted butter
  • 3 cloves garlic, thinly sliced
  • 1/2 lemon, juiced (about 1 tablespoon)
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prep the green beans: Wash the beans and trim off the stem ends. Cut into 2-inch pieces if desired. Pat completely dry with a clean towel.
  2. Prepare the other ingredients: Slice the garlic cloves thinly. Juice half a lemon. Measure out the almonds, salt, and pepper.
  3. Heat the skillet: Place a large skillet over medium-high heat for about 2 minutes. Add the butter and let it melt, swirling to coat the bottom.
  4. Toast the almonds: Add the sliced almonds to the melted butter. Stir constantly for 1-2 minutes until golden brown and fragrant. Use a slotted spoon to transfer to a small plate, leaving the butter in the pan.
  5. Cook the green beans: Add the trimmed and dried green beans to the hot skillet in a single layer. Cook undisturbed for 2-3 minutes until blistered. Toss and cook for another 2-3 minutes until bright green with charred edges and still crisp.
  6. Add the garlic: Push the beans to one side of the pan. Add the sliced garlic to the empty space and cook for about 30 seconds, stirring constantly, until fragrant. Toss everything together.
  7. Season and finish: Sprinkle salt and black pepper over the beans. Add lemon juice and toss to coat. Add red pepper flakes if using.
  8. Add the almonds back: Return the toasted almonds to the pan and give one final toss. Taste and adjust seasoning if needed.
  9. Serve immediately: Transfer to a serving dish and serve hot.

Notes

Dry the beans thoroughly to ensure a good char. Don’t crowd the pan; cook in batches if needed. Watch the almonds closely as they burn quickly. For best results, serve immediately.
