These delicate iced almond spritz cookies are quick, easy, and perfect for holiday baking. With a tender texture and a thin almond glaze, they’re a crowd-pleaser that looks elegant but requires minimal effort.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon almond extract
  • Optional: food coloring

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper. Don’t grease the paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3 to 4 minutes. Scrape down the sides of the bowl halfway through.
  3. Beat in the egg, almond extract, and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour and salt. Gradually add the flour mixture to the wet ingredients, mixing on low speed just until combined.
  5. Fit your cookie press with the disc of your choice. Fill the press with the dough. If the dough feels too soft, refrigerate it for 10 minutes. If it’s too stiff, let it sit at room temperature for a few minutes.
  6. Hold the cookie press perpendicular to the baking sheet and press firmly. Lift straight up. Space the cookies about 2 inches apart.
  7. Bake for 7 to 9 minutes, or until the edges are just barely golden. The centers should still look pale.
  8. Transfer the cookies to a wire cooling rack and let them cool completely before icing, about 15 to 20 minutes.
  9. In a small bowl, whisk together the powdered sugar, milk, and almond extract until smooth. Adjust consistency as needed.
  10. Drizzle the icing over the cooled cookies using a spoon or a small whisk. Alternatively, dip the tops of the cookies directly into the icing. Let the icing set for about 30 minutes before stacking or storing.

Notes

Don’t overwork the dough to avoid tough cookies. If the dough is too soft, chill for 10-15 minutes. Watch the bake time closely as cookies go from perfect to overdone quickly. Let cookies cool completely before icing. These cookies taste even better the next day. For best results, use high-quality butter with at least 80% fat content.
