These spooky yet adorable deviled egg spiders are a fun, protein-packed Halloween treat that kids love. Made with a clever lengthwise slicing technique, they’re quick to assemble and perfect for parties.

  • 12 large eggs, hard-boiled and peeled
  • 1/3 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • Paprika, for dusting
  • 1 can whole pitted black olives (jumbo preferred)
  • 1 bunch fresh chives, cut into 2-inch pieces

Instructions

  1. Boil the eggs: Place 12 large eggs in a single layer in a saucepan. Cover with cold water by about an inch. Bring to a boil over high heat, then cover the pot, turn off the heat, and let sit for exactly 12 minutes.
  2. Ice bath: While eggs sit, fill a large bowl with ice and cold water. Transfer eggs to the ice bath using a slotted spoon. Let cool for at least 10 minutes.
  3. Peel the eggs: Gently tap each egg on the counter to crack the shell, then roll between palms to loosen the membrane. Start peeling from the wider end. Run under cold water if needed.
  4. Slice the eggs lengthwise: Slice each egg down the middle from tip to tip. Gently pop out the yolks into a mixing bowl.
  5. Make the filling: Add 1/3 cup mayonnaise, 1 teaspoon yellow mustard, 1/2 teaspoon white vinegar, 1/4 teaspoon salt, and 1/8 teaspoon black pepper to the yolks. Mash together with a fork until smooth. Taste and adjust seasoning.
  6. Fill the egg whites: Spoon the filling into a piping bag or zip-top bag with a small corner snipped off. Pipe the filling into each egg white half, mounding slightly.
  7. Create the spiders: Slice black olives into rounds (about 4-5 per olive). Place one olive slice on top of each filled egg for the spider body. For eyes, place two tiny olive pieces on the front of the body.
  8. Add the legs: Insert 4 chive pieces on each side of the olive body, pushing gently into the filling so they stand up like spider legs.
  9. Dust with paprika: Sprinkle a light dusting of paprika over the entire platter.

Notes

Boil and peel eggs up to 24 hours ahead; assemble no more than 2 hours before serving to keep chives fresh. For easier peeling, use older eggs or add baking soda to the water. If filling is too soft, chill filled eggs for 10 minutes before adding legs. Leftovers can be stored in an airtight container in the fridge for up to 2 days, but remove chive legs before storing and add fresh ones when serving again. Do not freeze.
