Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • 2 cups all-purpose flour, spooned and leveled
  • ¼ teaspoon salt
  • 1 ½ cups powdered sugar, sifted
  • 2–3 tablespoons milk
  • ½ teaspoon vanilla extract
  • Food coloring (optional)
  • Sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats. Do not grease.
  2. In a large mixing bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until light, fluffy, and pale. Scrape down sides halfway through.
  3. Beat in egg yolk, vanilla extract, and almond extract (if using) until fully combined. Mixture may look slightly curdled.
  4. In a separate bowl, whisk together flour and salt. Gradually add to wet mixture, mixing on low speed just until dough comes together. Do not overmix.
  5. Spoon dough into cookie press according to manufacturer’s instructions. Fit with desired disc shape. Hold press perpendicular to baking sheet, press firmly, and lift straight up.
  6. Bake for 8-10 minutes, until edges are just barely golden. Centers should still look pale. Cool on baking sheet for 2 minutes, then transfer to wire rack to cool completely.
  7. For icing: Whisk together powdered sugar, milk, and vanilla extract until smooth. Consistency should be like thick glue, drizzling off whisk in a ribbon.
  8. Once cookies are completely cool, dip tops into icing or drizzle with a spoon. Add sprinkles immediately if desired.
  9. Let iced cookies sit at room temperature for about 30 minutes to allow icing to harden before serving or storing.

Notes

Use room temperature ingredients for best results. Don’t overmix dough once flour is added. If dough is too soft, chill for 10-15 minutes. Press cookie press firmly and lift straight up without twisting. Start checking cookies at 7 minutes to avoid overbaking. Icing should be thick enough to coat a spoon but thin enough to drizzle.
