Instructions

  1. Toast the corn: Heat a large skillet over medium-high heat. Add drained corn in a single layer. Let sit without stirring for 2 minutes until dark brown spots appear. Stir and cook for another 2-3 minutes until most kernels have some char. Remove from heat and let cool slightly.
  2. Mix the creamy base: In a mixing bowl, combine softened cream cheese, sour cream, mayonnaise, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper. Stir until smooth and well combined.
  3. Combine everything: Add toasted corn, rinsed black beans, and shredded Mexican blend cheese to the bowl. Fold gently until evenly coated.
  4. Choose your cooking method: For cold dip, transfer to a serving bowl, cover, and refrigerate for at least 30 minutes. For warm dip, preheat oven to 350°F (175°C). Transfer mixture to an 8×8 baking dish. Bake for 15-18 minutes until bubbly and golden on top. Alternatively, microwave in 30-second bursts, stirring between each, until hot (about 2 minutes total).
