  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (60g) plain Greek yogurt (full-fat recommended)
  • 2 tablespoons (32g) creamy peanut butter (natural, well-stirred)
  • 1 medium ripe banana, mashed
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • 1/2 teaspoon (2.5ml) vanilla extract

Instructions

  1. Mash the banana: Peel the ripe banana and mash it well with a fork in a medium bowl until mostly smooth with a few small lumps.
  2. Add the wet ingredients: To the mashed banana, add the milk, Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Stir with a fork or small whisk until the peanut butter is fully incorporated and the mixture is smooth and uniform (about 30 seconds).
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds (if using), and a tiny pinch of salt. Stir until everything is evenly combined. The mixture will look liquid—this is normal.
  4. Transfer to your jar: Pour the mixture into a mason jar or airtight container (16-ounce/500ml). Use a spatula to scrape every last bit. Screw the lid on tightly.
  5. Refrigerate overnight: Place the jar in the refrigerator for at least 6 hours, but overnight (8–12 hours) is ideal. The oats need time to soften and absorb the liquid.
  6. Serve cold or warm: In the morning, give the jar a good stir. If too thick, stir in a splash of milk. Eat cold straight from the jar, or microwave for 45–60 seconds (remove lid first, stir halfway) if you prefer warm oats.
  7. Add toppings: Top with sliced banana, a drizzle of extra peanut butter, a sprinkle of chia seeds, or chopped peanuts for crunch. Dark chocolate chips are also great.

Notes

For best texture, use full-fat Greek yogurt and well-stirred natural peanut butter. Rolled oats are non-negotiable—do not substitute quick or steel-cut oats. The oats keep in the fridge for up to 4 days and actually get creamier on days 2 and 3. If eating on the go, skip extra toppings to keep texture perfect.
