  • 2 cups (480ml) milk (any kind)
  • 1 cup (240g) plain Greek yogurt
  • 3 tablespoons (45ml) honey or maple syrup
  • 2 tablespoons (20g) chia seeds
  • 1 teaspoon (5ml) vanilla extract
  • ¼ teaspoon salt
  • ½ cup (130g) creamy peanut butter, plus extra for swirling
  • 3 large ripe bananas
  • Optional toppings: extra sliced banana, peanut butter drizzle, cinnamon, chopped peanuts, dark chocolate chips

Instructions

  1. Mash two of the bananas in a medium mixing bowl with a fork until mostly smooth with a few small lumps.
  2. Add the milk, Greek yogurt, honey or maple syrup, and vanilla extract to the mashed bananas. Whisk until the peanut butter is fully incorporated and the mixture is smooth.
  3. Stir in the rolled oats, chia seeds, and salt with a spatula until well combined. The mixture will be liquidy.
  4. Divide the mixture evenly among 4-6 mason jars or airtight containers, filling them about three-quarters full.
  5. Warm about 2 tablespoons of peanut butter in the microwave for 10-15 seconds until drizzle-able. Drop small spoonfuls into each jar and gently swirl with a knife.
  6. Slice the remaining banana and arrange the rounds on top of each jar, pressing them in gently.
  7. Seal the jars and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  8. In the morning, stir the oats, add desired toppings, and serve cold or at room temperature.

Notes

Use old-fashioned rolled oats, not quick oats, for best texture. Ripe bananas with brown spots provide natural sweetness. Warm peanut butter before mixing for smooth incorporation. Don’t skip the salt—it enhances flavor. Oats keep in the fridge for up to 5 days. For a vegan version, use plant-based milk, dairy-free yogurt, and maple syrup.
