These sparkling champagne jello shots are the perfect party treat—fun, festive, and surprisingly elegant. With a technique that keeps the bubbles intact, they’re firm yet silky, and guaranteed to be the first thing to disappear at your New Year’s Eve celebration.

Ingredients

Scale
  • 2 cups champagne or sparkling wine (Brut, Extra Dry Prosecco, or Moscato for sweeter)
  • 3 tablespoons unflavored gelatin powder (about 4 packets, Knox recommended)
  • 1/4 cup granulated sugar (adjust to taste; use 2 tablespoons for sweeter wine)
  • 1/2 cup cold water
  • 1 cup boiling water
  • 1 tablespoon fresh lemon juice (optional)
  • 1 teaspoon vanilla extract or fruit extract (optional)
  • 1 tablespoon Grand Marnier (optional, reduce champagne by same amount)
  • Fresh raspberries, pomegranate arils, or thin strawberry slices for garnish

Instructions

  1. Bloom the gelatin: Pour 1/2 cup cold water into a medium bowl. Sprinkle gelatin powder evenly over the surface. Let sit for 5 minutes until it forms a wobbly sponge.
  2. Dissolve gelatin and sugar: Bring 1 cup water to a rolling boil. Pour over bloomed gelatin and whisk gently until completely dissolved. Add sugar and whisk until fully incorporated. Mixture should be clear and smooth.
  3. Add champagne: Let gelatin mixture cool for about 5 minutes until warm but not hot (bathwater temperature). Slowly pour in 2 cups chilled champagne. Stir gently with a whisk or spoon to combine, preserving tiny bubbles.
  4. Pour into cups: Working quickly, pour mixture into 2-ounce plastic shot cups, leaving about 1/4 inch space at top for garnish. Use a piping bag or squeeze bottle for easier pouring. Skim off any foam if desired.
  5. Add garnishes: Drop a raspberry, a few pomegranate arils, or a thin strawberry slice into each cup. They will float to the top.
  6. Refrigerate until set: Place cups on a tray and refrigerate for 3-4 hours, or overnight. Jello should be firm to the touch and jiggle slightly when shaken.

Notes

Don’t rush the chilling time—freezing will ruin the texture. Use fresh gelatin powder and check expiration date. For best results, make the morning of your party and serve within 24 hours. Let gelatin mixture cool before adding champagne to preserve bubbles.
