Instructions

  1. Prep the avocados: Cut each avocado in half lengthwise, remove the pit, and scoop the flesh into a mixing bowl.
  2. Make the ‘secret green’ base: In a blender or food processor, combine the packed cilantro and fresh lime juice. Blend until the cilantro is completely broken down into a bright green liquid, about 15-20 seconds.
  3. Mash the avocados: Pour the cilantro-lime mixture over the avocados. Add the salt and pepper. Using a fork or potato masher, mash to your desired consistency (about 80% smooth, 20% chunky).
  4. Add the mix-ins: Fold in the diced red onion, minced jalapeño, diced tomato (if using), and minced garlic. Stir gently until evenly distributed. Taste and adjust salt or lime juice as needed.
  5. Assemble the ‘Green Goblin’ face: Transfer the guacamole to a serving platter or shallow bowl. Spread into an even layer with a slightly raised center. Use a spoon to create two indentations for the eyes.
