This honey glazed ham with brown sugar pineapple crust is the recipe that turns ham-haters into ham-enthusiasts. The brown sugar and pineapple create a sticky, sweet crust that caramelizes into something almost candy-like, while the honey keeps everything moist and tender.

Ingredients

Scale
  • 1 (8-10 pound) bone-in fully cooked ham (spiral-cut or whole)
  • 1 cup brown sugar, packed
  • 1/2 cup honey
  • 1/2 cup pineapple juice (100% juice)
  • 1/4 cup Dijon mustard
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cloves (optional)
  • 1/2 teaspoon cinnamon
  • 1 cup crushed pineapple, drained well (for topping, optional)
  • 1/4 cup brown sugar (for topping, optional)
  • 1 tablespoon honey (for topping, optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Position the rack in the lower third of the oven. Take the ham out of the fridge about 30 minutes before baking.
  2. Prepare the ham: Remove any plastic covering or netting. Rinse the ham quickly under cold water and pat it completely dry with paper towels. Place the ham cut-side down on the rack in your roasting pan.
  3. Score the ham: Using a sharp knife, make shallow cuts in a diamond pattern across the entire surface of the ham, about 1/4 inch deep, spaced about an inch apart.
  4. Make the glaze: In a small saucepan over medium heat, combine the brown sugar, honey, pineapple juice, Dijon mustard, melted butter, cloves, and cinnamon. Whisk until the sugar dissolves and the mixture is smooth and bubbly, about 3-4 minutes. Remove from heat.
  5. Start baking: Cover the ham loosely with aluminum foil. Bake for about 1 hour 15 minutes, or until the internal temperature reaches 120°F (49°C) in the thickest part, avoiding the bone.
  6. Apply the glaze: Remove the foil. Generously brush the glaze all over the ham, getting into the scored lines. If using the pineapple topping, mix the drained crushed pineapple with 1/4 cup brown sugar and 1 tablespoon honey, then spoon it over the top before glazing.
  7. Continue baking with glaze: Return the ham to the oven, uncovered. Bake for another 45-60 minutes, brushing with the remaining glaze every 15-20 minutes. The ham is done when the internal temperature reaches 140°F (60°C) and the crust is dark, sticky, and glossy.
  8. Rest and serve: Remove the ham from the oven and let it rest for 15-20 minutes before carving. Transfer to a serving platter and spoon any pan juices over the top.

Notes

Don’t overcook the ham since it’s already fully cooked. Score deeply enough (about 1/4 inch) for the glaze to soak in. Use a meat thermometer for accuracy. Make extra glaze for serving on the side. Let the ham rest before carving. If the crust gets too dark before the ham reaches temperature, tent it loosely with foil for the last 15 minutes.
