  • 1 teaspoon pickle juice (from a pickle jar)
  • Salt and black pepper to taste
  • Paprika for garnish (optional)
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Boil the eggs: Place eggs in a single layer in a medium saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 10 minutes. Prepare an ice bath. Transfer eggs to ice bath and cool for at least 5 minutes.
  2. Cook the bacon: While eggs cool, cook bacon in a large skillet over medium heat until crispy, about 5-7 minutes, flipping once. Transfer to paper towels to drain. Once cool, crumble or chop into small pieces. Reserve about 1 tablespoon for garnish.
  3. Peel and halve the eggs: Gently tap cooled eggs to crack shells, roll between palms to loosen, and peel under cold running water. Pat dry. Slice each egg in half lengthwise. Pop out yolks into a small mixing bowl. Arrange egg white halves on a serving platter.
  4. Make the filling: Add mayonnaise, yellow mustard, pickle juice, and a pinch of salt and pepper to the yolks. Mash with a fork until smooth and creamy. Stir in crumbled bacon (reserving 1 tablespoon for garnish). Taste and adjust seasoning.
  5. Fill the eggs: Spoon yolk mixture into a piping bag or zip-top bag with corner snipped off. Pipe evenly into egg white halves. Alternatively, use a small spoon to fill each egg.
  6. Garnish and serve: Sprinkle reserved bacon bits over filled eggs. Dust with paprika and top with fresh chives or parsley if desired. Serve immediately or refrigerate until ready to serve.

Notes

Use older eggs for easier peeling. Ensure bacon is very crispy to avoid chewiness in the filling. Taste filling before piping and adjust seasoning. For make-ahead, store peeled eggs and crumbled bacon separately; assemble a few hours before serving. Leftovers keep in an airtight container in the fridge for up to 2 days.
