Instructions

  1. Cook the bacon: Place bacon slices in a cold Dutch oven. Turn heat to medium and cook until crispy, about 8-10 minutes, flipping once. Transfer to a paper towel-lined plate. Once cool, crumble into small pieces.
  2. Sauté the aromatics: Pour off all but 2 tablespoons of bacon fat. Add diced onion and cook over medium heat until softened, about 5 minutes. Add minced garlic and cook for 30 seconds more.
  3. Make the roux: Sprinkle flour over the onions and garlic. Stir constantly for 2 minutes until the mixture is thick and pasty and smells slightly nutty.
  4. Add the liquids: Slowly pour in chicken broth while whisking continuously. Then add milk, whisking until smooth.
