Ingredients

Scale
  • 3 pounds sweet potatoes (about 4–5 medium)
  • 1/4 cup unsalted butter, melted
  • 1/3 cup pure maple syrup
  • 2 tablespoons bourbon (optional)
  • 2 large eggs, lightly beaten
  • 1/3 cup milk (whole milk preferred)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 cup pecans, chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cook the sweet potatoes: either roast them whole (pricked with a fork, wrapped in foil) at 375°F for 45-60 minutes until soft, or peel, cube, and boil in salted water for 15-20 minutes until fork-tender.
  3. Let the sweet potatoes cool slightly, then scoop the flesh into a large mixing bowl (discard skins if roasted). Mash with a potato masher until mostly smooth with a few lumps.
  4. Add melted butter, maple syrup, bourbon, beaten eggs, milk, and vanilla extract to the mashed sweet potatoes. Stir until well combined and smooth.
  5. Season with salt, cinnamon, and nutmeg. Stir again. Taste and adjust seasoning if needed.
  6. Pour the sweet potato mixture into the prepared baking dish and spread evenly with a spatula.
  7. In a medium bowl, combine chopped pecans, flour, brown sugar, cinnamon, and salt. Add cold butter cubes and cut into the dry mixture using a pastry cutter, two forks, or your fingertips until it resembles coarse crumbs with some pea-sized butter pieces.
  8. Sprinkle the streusel evenly over the sweet potato mixture. Do not press it down.
  9. Bake for 25-30 minutes, until the streusel is golden brown and the edges are bubbling. If the streusel browns too quickly, tent with foil for the last 10 minutes.
  10. Remove from the oven and let rest for 10 minutes before serving.

Notes

For best flavor, roast the sweet potatoes instead of boiling. Toast pecans before using for deeper flavor. Keep streusel butter cold for best texture. The casserole can be assembled a day ahead and refrigerated; add 10-15 minutes to baking time. Bourbon is optional; replace with extra maple syrup and vanilla if desired.
