  • 1 teaspoon cinnamon (for streusel)
  • 3 tablespoons (42g) cold butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C) and line two muffin pans with 16 paper liners. Position the racks in the upper and lower thirds of the oven.
  2. Make the cream cheese filling: In a medium bowl, beat 8 oz softened cream cheese with ¼ cup powdered sugar and ½ teaspoon vanilla extract until smooth and fluffy. Chill in the fridge if too soft.
  3. Prepare the streusel topping: In a small bowl, combine ½ cup flour, ¼ cup packed brown sugar, and 1 teaspoon cinnamon. Add 3 tablespoons cold cubed butter and ¼ cup chopped pecans (if using). Cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Refrigerate until ready to use.
  4. Whisk the dry ingredients: In a large bowl, whisk 2 ½ cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, 2 teaspoons pumpkin pie spice, and 1 teaspoon cinnamon.
  5. Mix the wet ingredients: In a separate large bowl, whisk together 1 cup granulated sugar and ½ cup packed brown sugar with ½ cup vegetable oil until smooth. Add 2 large eggs, one at a time, whisking well after each. Stir in 1 cup pumpkin puree, ¼ cup buttermilk, and 1 teaspoon vanilla extract.
