This pumpkin spice cold foam iced coffee is a quick and easy fall drink that impresses guests with its creamy, airy foam and perfectly balanced spice. It’s made with simple ingredients and comes together in under 5 minutes.

  • 1 cup strong brewed coffee, cooled
  • 1/2 cup milk of choice (whole milk or oat milk)
  • 12 tablespoons pumpkin spice syrup (store-bought or homemade)
  • Ice cubes
  • 1/4 cup cold heavy cream (at least 36% milk fat)
  • 2 tablespoons milk (any kind)
  • 1 tablespoon pumpkin spice syrup (or 1 tablespoon maple syrup + 1/2 teaspoon pumpkin pie spice)
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of salt
  • Optional: 1/4 teaspoon unflavored gelatin powder dissolved in 1 tablespoon cold water

Instructions

  1. Brew 1 cup of strong coffee and let it cool to room temperature (or refrigerate for 10 minutes).
  2. In a tall jar or bowl, combine the cold heavy cream, 2 tablespoons milk, 1 tablespoon pumpkin spice syrup, vanilla extract, pumpkin pie spice, and a pinch of salt. If using gelatin, dissolve it in 1 tablespoon cold water first, then add to the mixture.
  3. Use a handheld frother on low speed to blend the ingredients for 30 seconds, then increase to high speed for another 30 seconds until thick enough to hold a ribbon.
  4. Fill a tall glass with ice cubes. Pour the cooled coffee over the ice, then add the 1/2 cup milk. Stir gently.
  5. Spoon the cold foam gently over the iced coffee. Sprinkle a pinch of pumpkin pie spice on top for garnish.
  6. Serve immediately.

Notes

For a dairy-free version, use chilled coconut cream and oat milk. The foam is best within 5 minutes of frothing. Do not skip the pinch of salt in the foam. If the foam seems watery, the cream may not be cold enough.
