Ingredients

Scale
  • 4 cups frozen sweet corn (about 20 ounces; thawed and drained well)
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1 large egg (lightly beaten)
  • 1 1/2 cups sharp cheddar cheese (shredded, not pre-shredded)
  • 1–2 fresh jalapeños (seeded and finely diced)
  • 1/4 cup sour cream
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper (freshly ground)
  • 1/4 teaspoon smoked paprika (optional)
  • 1/4 cup panko breadcrumbs (for topping, optional)
  • 1 tablespoon butter (melted, for topping)
  • 2 tablespoons additional cheddar (shredded, for topping)
  • A few thin slices of fresh jalapeño (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8×8 or 9×9 baking dish with butter or cooking spray.
  2. Thaw and drain the corn: If frozen, run under warm water in a colander for about a minute, then press firmly with a paper towel to remove excess moisture.
  3. Sauté the corn: Melt 2 tablespoons butter in a large skillet over medium-high heat. Add the drained corn and cook for 3-4 minutes, stirring occasionally, until the corn starts to get golden on the edges. Remove from heat and let cool for a minute or two.
  4. Mix the wet ingredients: In a mixing bowl, whisk together the heavy cream, beaten egg, and sour cream until smooth.
  5. Add the cheese and jalapeño: Stir in 1 1/2 cups shredded cheddar and the diced jalapeño. Reserve a handful of cheese for the topping if desired.
  6. Combine everything: Add the sautéed corn to the bowl along with the salt, pepper, and smoked paprika (if using). Stir gently until evenly distributed. If the mixture looks too wet, add a tablespoon of flour or cornstarch.
  7. Transfer to baking dish: Pour the mixture into the greased dish and spread evenly with a spatula.
  8. Make the topping (if using): In a small bowl, mix the panko with the melted butter until evenly coated. Sprinkle over the casserole, followed by the reserved cheese and a few jalapeño slices if desired.
  9. Bake: Place the dish in the preheated oven and bake for 18-22 minutes, until the edges are bubbly and golden, and the top is lightly browned. The center should be set but still have a little jiggle.
  10. Rest before serving: Let the casserole sit for 5 minutes after removing from the oven to firm up before serving.

Notes

Don’t skip the sauté step—it concentrates the corn’s flavor and removes excess moisture. Shred your own cheese for the best melt. Let the casserole rest for 5 minutes before serving to ensure clean slices. Can be assembled up to a day in advance and refrigerated; add 5-7 minutes to baking time if starting from cold. For a spicier version, leave jalapeño seeds in or use pepper jack cheese.
