  • ½ cup (115g) unsalted butter, softened to room temperature
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk
  • 1 tablespoon red food coloring (gel preferred)
  • ½ cup (60g) powdered sugar, for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until no lumps remain.
  3. In a large bowl, beat the softened butter and granulated sugar together with a hand mixer on medium speed until light and fluffy, about 2-3 minutes. Scrape down the sides halfway through.
  4. Add the egg, vanilla extract, and milk, and beat until combined. The mixture may look slightly separated.
  5. Add the red food coloring and beat until the color is evenly distributed and vibrant.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  7. Place the powdered sugar in a shallow bowl. Using a cookie scoop or tablespoon, portion out about 1.5 tablespoons of dough and roll into a ball between your palms.
  8. Roll each dough ball generously in the powdered sugar until completely coated, so no red shows through.
  9. Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart. Fit 8 cookies per sheet.
  10. Bake for 10-12 minutes. The cookies should look puffy with slightly cracked tops; edges should be set but centers soft.
  11. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
