Ingredients

Scale
  • 3 tablespoons unsalted butter, softened (42g)
  • ¼ cup granulated sugar (50g)
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ½ cup plus 2 tablespoons all-purpose flour (75g)
  • ½ teaspoon cream of tartar
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons granulated sugar (for coating, 25g)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Make the cinnamon-sugar coating: In a small bowl, whisk together 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon. Set aside.
  3. Cream the butter and sugar: In a medium mixing bowl, beat 3 tablespoons of softened butter with ¼ cup of granulated sugar until light and fluffy, about 2 minutes with an electric mixer or 3 minutes by hand.
  4. Add the egg yolk and vanilla: Drop in the egg yolk and ½ teaspoon of vanilla extract. Beat until well combined, about 30 seconds. Scrape down the sides of the bowl.
  5. Mix the dry ingredients: In a separate small bowl, whisk together ½ cup plus 2 tablespoons of all-purpose flour, ½ teaspoon of cream of tartar, ¼ teaspoon of baking soda, and ¼ teaspoon of salt.
  6. Combine wet and dry ingredients: Gradually add the flour mixture to the butter mixture, mixing on low speed or stirring by hand until just combined. Do not overmix.
  7. Shape the dough: Divide the dough into 6 equal portions (about 1.5 tablespoons each). Roll each portion between your palms to form a smooth ball.
  8. Roll in cinnamon-sugar: Roll each dough ball in the cinnamon-sugar mixture until completely coated. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake: Bake for 9-11 minutes, or until the edges are set and the tops are puffed and crackled. The centers will look slightly underdone.
  10. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Don’t overmix the dough—mix just until flour disappears. Use room temperature ingredients for best results. For a thicker cinnamon-sugar coating, roll dough balls twice. Let cookies cool on baking sheet for 5 minutes before moving. Store in an airtight container at room temperature for up to 3 days; place a piece of bread in the container to keep them soft. Freeze cooled cookies for up to 3 months.
