  • 2 cups (480 ml) ginger beer
  • 1/4 cup (60 ml) fresh lime juice
  • 2 tablespoons (30 ml) honey or simple syrup
  • 2 whole cinnamon sticks
  • 4 to 6 whole cloves
  • 2 to 3 fresh rosemary sprigs
  • 1/2 cup (about 75 g) pomegranate arils
  • Ice cubes

Instructions

  1. Warm the pomegranate juice: Pour 2 cups of pomegranate juice into a medium saucepan. Add 2 whole cinnamon sticks and 4 to 6 whole cloves. Place the pan over medium-low heat and warm the juice for 5 to 7 minutes. Do not let it boil—you just want it hot enough to extract the spice flavors. Stir occasionally with a wooden spoon.
  2. Steep the spices: Once the juice is warm, remove the pan from the heat. Cover it with a lid and let the spices steep for 10 minutes.
  3. Strain the juice: Set a fine-mesh strainer over a large pitcher. Pour the warm pomegranate juice through the strainer to catch the cinnamon sticks and cloves. Discard the spices.
  4. Chill the juice: Place the pitcher in the refrigerator for at least 30 minutes, or until the juice is completely cold.
  5. Add the remaining ingredients: Once the spiced pomegranate juice is cold, stir in 2 cups of ginger beer, 1/4 cup of fresh lime juice, and 2 tablespoons of honey or simple syrup. Stir gently until the honey is fully dissolved.
  6. Prepare the glasses: Fill your copper mugs or glass tumblers with ice cubes.
  7. Pour and garnish: Pour the mocktail mixture into the prepared glasses, filling them about three-quarters full. Garnish with a sprig of fresh rosemary and a sprinkle of pomegranate arils.
  8. Serve immediately: This mocktail is best enjoyed within 15 minutes of pouring, while the ginger beer is still bubbly and the ice is fresh.

Notes

Don’t boil the juice. Use fresh lime juice. Chill everything in advance. Balance the sweetness to taste. The spiced pomegranate juice base can be made up to 3 days in advance. Add ginger beer and lime juice just before serving to keep the fizz.
