  • 3 large eggs, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 box (15.25 oz or 432g) yellow cake mix
  • 1 cup (113g) chopped pecans
  • 1/2 cup (113g or 1 stick) unsalted butter, melted
  • 1/2 cup (100g) packed light brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Make the pumpkin layer: In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, granulated sugar, brown sugar, pumpkin pie spice, vanilla extract, and salt. Whisk until smooth and well combined, about 2 minutes.
  3. Pour the pumpkin mixture into the prepared baking dish. Use a spatula to spread evenly. Tap the dish gently on the counter to release air bubbles.
  4. Make the pecan streusel topping: In a medium mixing bowl, combine dry cake mix, chopped pecans, brown sugar, and cinnamon. Stir with a fork. Pour melted butter over the top and stir until the mixture looks like wet, crumbly sand.
  5. Sprinkle the streusel evenly over the pumpkin layer. Do not press it down.
