A budget-friendly pecan pie cobbler that uses half the pecans of traditional pecan pie but tastes twice as good. This easy dessert comes together in under an hour with simple pantry staples and is kid-approved.

  • 1 cup (200g) light brown sugar, packed
  • 1/2 cup (120ml) light corn syrup
  • 1/4 cup (60ml) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup (100g) pecan halves or pieces
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) whole milk
  • 1/4 cup (60ml) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 baking dish with butter or non-stick spray.
  2. Make the pecan filling: In a large mixing bowl, whisk together the packed brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until smooth, about 30 seconds.
  3. Fold in the pecans: Add the pecan pieces to the filling mixture and stir gently with a spatula until all nuts are coated.
  4. Pour the filling into the prepared dish and spread evenly with a spatula.
  5. Make the cobbler topping: In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the milk and melted butter, then stir until just combined (a few lumps are fine).
  6. Drop the topping over the filling: Using a spoon or small cookie scoop, drop dollops of the topping batter evenly over the pecan filling (about 8-9 dollops). Do not spread.
  7. Pour melted butter over the topping: Drizzle the remaining 1/4 cup melted butter evenly over the topping dollops.
  8. Bake for 35-40 minutes, until the topping is golden brown and a toothpick inserted into the topping (not the filling) comes out clean. If browning too quickly, tent loosely with foil for the last 10 minutes.
  9. Cool for at least 15 minutes on a wire rack before serving. The filling will set as it cools.

Notes

Don’t overmix the topping; a few lumps are fine. Room temperature eggs incorporate better. Let the cobbler rest for 15 minutes before serving to allow the filling to set. For best results, use a light-colored baking dish. Toast pecans for extra flavor if desired.
