Classic Champagne Jello Shots for New Year’s Eve Party

These classic champagne jello shots are a festive, easy-to-make party treat that combines bubbly champagne with sweet strawberry Jell-O. Perfect for New Year’s Eve, they come together in under 15 minutes of prep and are always a crowd-pleaser.

  • 1 ½ cups champagne or sparkling wine, divided
  • 1 box (3 oz) strawberry Jell-O
  • 1 packet (about 2 ¼ teaspoons) unflavored gelatin powder
  • 2 tablespoons granulated sugar
  • ½ cup boiling water

Instructions

  1. Bring ½ cup of water to a rolling boil in a small saucepan.
  2. In a medium mixing bowl, combine the Jell-O powder and unflavored gelatin. Pour the boiling water over the mixture and whisk vigorously for about 2 minutes until completely dissolved.
  3. Whisk in the 2 tablespoons of granulated sugar until fully dissolved. Set aside to cool for about 5 minutes.
  4. Open the champagne carefully to avoid a geyser. Measure out 1 cup of champagne and set aside.
  5. Slowly pour the champagne into the Jell-O mixture while whisking gently until well combined. The mixture should look slightly frothy.
  6. Place plastic shot cups on a baking sheet for stability. Using a liquid measuring cup with a spout, carefully pour the mixture into each cup, filling them about ¾ full.
  7. Carefully transfer the baking sheet to the refrigerator. Chill for at least 4 hours, or overnight for best results.
  8. After 4 hours, gently jiggle one of the cups to check for doneness. It should wobble like firm Jell-O, not slosh like liquid.

Notes

Let the Jell-O mixture cool for 5 minutes before adding champagne to preserve bubbles. Use a decent champagne or sparkling wine for best flavor. For a non-alcoholic version, substitute with sparkling apple cider or ginger ale. For vegan option, try agar-agar powder (ratios may vary).
