  • 3 large shallots, thinly sliced into rings
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon paprika
  • Vegetable oil, for frying (about 1 ½ cups)
  • ½ cup crispy fried shallots (reserved from batch)
  • ¼ cup shredded Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the green beans: Bring a large pot of salted water to a rolling boil. Add the trimmed green beans and cook for exactly 3 minutes. Drain immediately.
  3. Shock the beans: Plunge the drained beans into a large bowl of ice water for 2-3 minutes. Drain well and pat dry with a clean kitchen towel.
  4. Make the crispy fried shallots: Heat about 1 ½ inches of vegetable oil in a small skillet over medium heat. In a shallow bowl, whisk together flour, salt, and paprika. Toss the sliced shallots in the flour mixture until fully coated. Shake off excess flour. Fry in small batches for 2-3 minutes until golden brown and crispy. Transfer to a paper-towel-lined plate to drain. Season with a tiny pinch of salt.
  5. Make the sauce: In a large mixing bowl, whisk together cream of mushroom soup, milk, soy sauce, black pepper, and garlic powder until smooth.
  6. Combine everything: Add the blanched and dried green beans to the bowl with the sauce. Gently fold until every bean is evenly coated.
  7. Assemble the casserole: Pour the green bean mixture into a greased 9×13 inch baking dish. Spread into an even layer.
  8. Add the topping: Sprinkle the reserved crispy fried shallots evenly over the top. If using Parmesan cheese, sprinkle it over the shallots.
  9. Bake: Place the dish in the preheated oven and bake, uncovered, for 25-30 minutes, or until bubbly around the edges and the topping is deeply golden and crispy.
  10. Rest and serve: Let the casserole sit on the counter for about 5 minutes before serving.

Notes

Don’t skip the blanching step for perfect tender-crisp beans. Dry the beans thoroughly after shocking to avoid a watery casserole. Fry shallots in small batches to ensure they get crispy. Let the casserole rest for 5 minutes before serving to allow the sauce to set.
