These cozy candy corn blondies are a quick and easy fall dessert that transforms candy corn into soft, caramel-like pockets of sweetness, paired with creamy white chocolate chips for a chewy, crowd-pleasing treat.

  • 1 cup (200g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups (180g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (about 150g) candy corn
  • ½ cup (90g) white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a large microwave-safe bowl, melt ½ cup unsalted butter in 30-second intervals until liquid. Let cool for 1 minute.
  3. Add 1 cup packed light brown sugar and ¼ cup granulated sugar to the melted butter. Whisk until smooth and combined.
  4. Add 1 large egg and 1 teaspoon vanilla extract. Whisk vigorously until glossy and slightly thickened, about 30 seconds.
  5. In a separate bowl, whisk together 1½ cups all-purpose flour, ½ teaspoon baking powder, and ¼ teaspoon salt.
  6. Gradually add the flour mixture to the wet ingredients, folding gently with a spatula until just combined. Do not overmix.
  7. Gently fold in 1 cup candy corn and ½ cup white chocolate chips. Reserve a handful of each for topping.
  8. Spread the batter evenly into the prepared pan. Sprinkle reserved candy corn and white chocolate chips on top.
  9. Bake for 20-25 minutes, until edges are golden brown and center is set but still slightly soft. A toothpick inserted in the center should come out with a few moist crumbs.
  10. Cool in the pan for at least 20 minutes, then lift out using parchment overhang. Transfer to a wire rack to cool completely before cutting into 16 squares.

For best results, use fresh candy corn. Press any visible candy corn into the batter before baking to prevent burning. Let blondies cool completely before cutting for clean slices. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
