A warm, buttery sugar cookie latte that rivals the Starbucks original, made with a homemade sugar cookie syrup and simple ingredients. This happy accident turned into a holiday favorite that costs a fraction of the price.

  • 1 cup granulated sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 tablespoon unsalted butter
  • Pinch of salt
  • 2 shots espresso (about 2 ounces) or 1/2 cup strong brewed coffee
  • 1 cup milk of choice (whole milk or oat milk recommended)
  • 2–3 tablespoons sugar cookie syrup
  • Whipped cream (optional)
  • Red and green sprinkles (optional)

Instructions

  1. Make the sugar cookie syrup: Combine sugar and water in a small saucepan over medium heat. Stir until sugar dissolves completely, about 2 minutes. Do not let it boil vigorously. Remove from heat and stir in vanilla extract, almond extract, butter, and salt. Let cool for 5 minutes, then transfer to a glass jar. Syrup keeps in the fridge for up to two weeks.
  2. Brew your espresso or coffee: Brew 2 shots of espresso or 1/2 cup of very strong coffee using a dark roast.
  3. Warm and froth your milk: Heat milk in a small saucepan over medium-low heat until steaming but not boiling (about 150°F). Pour into a tall jar or use a frother to create foam. If using a handheld frother, tilt the container and froth for about 20 seconds until milk doubles in volume.
  4. Combine everything: Pour sugar cookie syrup into your mug first. Add hot espresso and stir to combine. Slowly pour frothed milk over the back of a spoon to create layers. Stir gently if desired.
  5. Top and garnish: Add a generous dollop of whipped cream on top. Sprinkle with red and green sprinkles. Drizzle a tiny bit of syrup over the whipped cream if desired. Serve immediately.

Notes

The syrup is very sweet, so start with 2 tablespoons and taste before adding more. Do not boil the syrup to avoid caramelization. For best results, layer flavors by adding syrup to mug first, then espresso, then milk. Toast sprinkles in a dry pan for 30 seconds for a bakery-fresh vibe. Make extra syrup to keep on hand.
