Ingredients

Scale
  • 1/2 cup (1 stick or 113g) unsalted butter, melted
  • 1 cup (200g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (120g) dried cranberries
  • 1/2 cup (90g) white chocolate chips
  • 1/2 cup (90g) white chocolate chips (for drizzle)
  • 1 teaspoon coconut oil or vegetable oil (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Lightly grease the parchment with cooking spray or butter.
  2. In a medium microwave-safe bowl, melt the 1/2 cup unsalted butter in 30-second increments, stirring between each. Let it cool for 2-3 minutes.
  3. Add the 1 cup packed light brown sugar to the melted butter and whisk until smooth and combined—about 30 seconds. Add the 1 large egg and 1 teaspoon vanilla extract, then whisk vigorously for about 1 minute until the mixture is thick, glossy, and slightly lighter in color.
  4. In a small bowl, whisk together the 1 cup all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  5. Pour the dry ingredients into the wet mixture. Use a rubber spatula to fold gently—just until no streaks of flour remain. Do not overmix.
  6. Gently fold in the 3/4 cup dried cranberries and 1/2 cup white chocolate chips until evenly distributed.
  7. Scrape the batter into the prepared pan and spread it evenly into all corners. The batter should be about 3/4 inch thick.
  8. Bake on the middle rack for 22-26 minutes. The edges should be golden brown and pulling away from the sides slightly. The center will look slightly underdone and puffy. A toothpick inserted into the center should come out with a few moist crumbs.
  9. Transfer the pan to a cooling rack and let the blondies cool in the pan for at least 30 minutes. Then use the parchment overhang to lift them out and let them cool completely on the rack—another 30 minutes minimum.
  10. In a small microwave-safe bowl, combine the 1/2 cup white chocolate chips and 1 teaspoon coconut oil. Microwave in 20-second intervals, stirring after each, until smooth and fully melted.
  11. Use a fork or a small spoon to drizzle the melted white chocolate back and forth over the cooled blondies. Let the drizzle set at room temperature for about 20 minutes, or refrigerate for 10 minutes.
  12. Use a sharp knife to cut into 9 or 16 squares. Wipe the knife clean between cuts for neat edges.

Notes

Don’t overbake—pull blondies when center still looks slightly underdone. Use room temperature egg to prevent butter from seizing. Toast dried cranberries in a dry skillet for 2-3 minutes for extra flavor. Use a kitchen scale for accurate flour measurement. Let white chocolate drizzle set completely before cutting for clean edges.
