  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 28 oz can crushed tomatoes (preferably San Marzano)
  • 2 tablespoons tomato paste
  • 4 cups low-sodium chicken broth
  • 8–10 lasagna noodles, broken into 2-inch pieces (no-boil preferred)
  • 1 cup ricotta cheese (full-fat)
  • 1 cup shredded mozzarella cheese (low-moisture)
  • ½ cup grated Parmesan cheese
  • 2 teaspoons dried Italian seasoning (or 1 tsp dried oregano + 1 tsp dried basil)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Brown the Sausage and Onions: Heat a large skillet over medium-high heat. Add the ground Italian sausage and diced onion. Cook, breaking the sausage into small crumbles, until browned and onion is translucent (6-8 minutes). Add minced garlic and cook for 1 more minute. Drain excess fat if needed.
  2. Build the Broth Base: Transfer the sausage mixture to a 5-6 quart slow cooker. Add crushed tomatoes, tomato paste, chicken broth, Italian seasoning, and red pepper flakes (if using). Stir until tomato paste is dissolved. Season with a pinch of salt and black pepper.
  3. Cook on Low for 2 Hours: Cover and cook on low for 2 hours to meld flavors.
  4. Add the Lasagna Noodles: After 2 hours, add the broken lasagna noodle pieces, stirring gently to submerge. Re-cover and cook on low for another 1.5 to 2 hours, until noodles are tender but still al dente. Check at 90 minutes.
  5. Stir in the Ricotta: Turn off the slow cooker or switch to warm. Drop spoonfuls of ricotta over the soup and gently stir until creamy ribbons form. Let sit for 2-3 minutes.
  6. Serve and Top with Cheese: Ladle soup into bowls. Top with shredded mozzarella and grated Parmesan. Garnish with fresh basil or parsley if desired. Serve immediately.
