  • 1 tablespoon olive oil
  • 6 cloves garlic, minced
  • ⅓ cup honey (about 110g)
  • ¼ cup low-sodium soy sauce (60ml)
  • 2 tablespoons rice vinegar (30ml)
  • 1 tablespoon brown sugar (12g)
  • 1 teaspoon sesame oil (optional)
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup chicken broth (60ml)
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides with salt and pepper. Let sit at room temperature for 10 minutes.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, brown sugar, sesame oil (if using), and red pepper flakes (if using). Set aside.
  3. Heat a large skillet or cast iron pan over medium-high heat and add olive oil. Wait until the oil shimmers.
  4. Place chicken thighs skin-side down in the hot pan. Cook undisturbed for 5-6 minutes until skin is deep golden brown and crispy. Flip and cook the other side for 4 minutes.
  5. Transfer seared thighs to a plate. Leave rendered fat in the pan.
  6. Reduce heat to medium-low. Add minced garlic and stir constantly for 30 seconds until fragrant and just barely golden.
  7. Pour in chicken broth and scrape up browned bits from the pan. Let simmer for 1 minute.
  8. Pour honey-soy mixture into the pan. Stir to combine and bring to a gentle simmer.
  9. Return chicken to the pan, skin-side up. Spoon some sauce over the tops.
  10. Reduce heat to low, cover, and cook for 10 minutes. Remove lid, baste chicken with sauce, and simmer uncovered for 5-7 minutes until sauce is thick and glossy and chicken reaches 165°F (74°C) internally.
  11. Remove from heat. Let rest in sauce for 5 minutes. Garnish with sliced green onions and sesame seeds.
