This easy sweet potato casserole uses canned sweet potatoes for a quick, creamy, and delicious holiday side dish topped with perfectly toasted marshmallows. It’s a crowd-pleaser that comes together in under 45 minutes.

  • 2 cans (15 ounces each) canned sweet potatoes, drained well
  • 4 tablespoons unsalted butter, softened
  • 2 large eggs, room temperature
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Drain the canned sweet potatoes well in a colander, letting them sit for a few minutes to remove excess liquid.
  3. Transfer the drained sweet potatoes to a large mixing bowl. Mash them with an electric hand mixer on low speed until mostly smooth (a few small lumps are fine).
  4. Add the softened butter, sugar, eggs, vanilla extract, cinnamon, and salt. Mix on low speed until well combined and creamy. Scrape down the sides of the bowl with a rubber spatula.
  5. Pour the sweet potato mixture into the greased baking dish and spread into an even layer. Tap the dish gently on the counter to settle.
  6. Bake for 20 minutes, until the mixture is set and slightly puffed around the edges.
  7. Remove from the oven and sprinkle the mini marshmallows evenly over the top. If using pecans, scatter them over the marshmallows.
  8. Switch the oven to broil. Broil for 1-2 minutes, watching closely, until the marshmallows are golden brown with some darker spots. Rotate the dish halfway through for even browning.
  9. Remove from the oven and let the casserole rest for 5 minutes before serving.

Notes

Drain canned sweet potatoes well to avoid a watery casserole. Use room temperature eggs and butter for smooth blending. Watch marshmallows closely under the broiler as they burn quickly. The sweet potato base can be prepared up to 2 days in advance and stored in the refrigerator.
