Cozy Mummy Meatball Sub Bites: Easy Halloween Appetizer

These adorable mummy meatball sub bites are the perfect Halloween appetizer. Made with frozen meatballs and canned biscuit dough, they come together in about 30 minutes for a fun, festive, and delicious treat.

  • 1 (16 oz) package frozen fully cooked Italian-style meatballs
  • 1 (16.3 oz) can refrigerated biscuit dough (like Pillsbury Grands!)
  • 1/2 cup marinara sauce
  • 1 large egg, beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 24 candy eyeballs
  • Optional: mustard or ketchup for bloodshot eyes
  • For serving: extra warm marinara sauce, grated Parmesan cheese, fresh basil or parsley

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Place frozen meatballs on a microwave-safe plate and microwave for 1-2 minutes until thawed enough to handle.
  3. Separate the 8 biscuits. Flatten each into a 4-inch oval, then slice each oval into 4 long thin strips (32 strips total).
  4. Place one thawed meatball on the parchment-lined baking sheet. Wrap 3-4 strips of dough around the meatball, leaving a small gap in the middle for the face.
  5. Spoon about 1/4 teaspoon of marinara sauce into the face gap of each mummy.
  6. In a small bowl, whisk the beaten egg with garlic powder and dried oregano. Brush the egg wash over the exposed dough strips.
  7. Bake for 12-15 minutes, until the dough is golden brown and puffed and the meatballs are heated through.
  8. Remove from oven and let cool on the baking sheet for 2 minutes. While still warm, gently press two candy eyeballs into the exposed marinara sauce.

Notes

Don’t over-thaw the meatballs; they should be just thawed enough to handle but still cold in the center. If dough strips unroll during baking, tuck the ends under the meatball before baking. For best results, reheat leftovers in an air fryer at 350°F for 3-4 minutes.
