  • ½ cup unsalted butter, melted (113g)
  • ¾ cup granulated sugar (150g)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour (190g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips (175g)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or non-stick spray. If using parchment paper, cut a strip that fits the bottom and hangs over the long sides by about 2 inches.
  2. In your large mixing bowl, mash the three ripe bananas with a fork or potato masher until mostly smooth. A few small lumps are fine.
  3. Pour the melted butter over the bananas and stir until combined.
  4. Add the granulated sugar and stir until fully incorporated. The mixture should look glossy and slightly thickened.
  5. Crack the eggs directly into the bowl. Add the vanilla extract. Stir gently but thoroughly until the eggs are fully incorporated.
  6. Sprinkle the flour, baking soda, and salt over the wet mixture. Fold together with a spoon or spatula just until no dry flour remains. Do not overmix.
  7. Fold in the chocolate chips with a few gentle strokes. Reserve a handful to sprinkle on top of the batter once it’s in the pan.
  8. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the reserved chocolate chips on top. Tap the pan gently on the counter to release air bubbles.
  9. Bake for 55 to 65 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil.
  10. Cool in the pan for 10 minutes on a wire rack.
  11. Use the parchment paper overhang to lift the bread out of the pan. Place directly on the wire rack to cool completely before slicing.

Don’t overmix the batter to avoid a tough loaf. Use room temperature eggs to prevent the melted butter from seizing. Check for doneness at the 50-minute mark. Let the bread cool before slicing for best texture. Toast leftover slices for a treat.
