Cozy One-Pan Garlic Butter Chicken Thighs: Easy Weeknight Dinner

Tender chicken thighs, crispy skin, and perfectly cooked green beans and potatoes, all bathed in a rich garlic butter sauce. This one-pan wonder comes together in under 40 minutes for a cozy, satisfying meal with minimal cleanup.

  • 4–6 bone-in, skin-on chicken thighs (about 2 lbs)
  • 4 tablespoons unsalted butter, softened
  • 6–8 cloves fresh garlic, minced
  • 1 lb fresh green beans, trimmed
  • 1 lb baby potatoes (Yukon Gold or red), halved
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and paprika.
  2. In a small bowl, mash together softened butter and minced garlic with a fork. Set aside.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering. Place chicken thighs skin-side down and cook without moving for 5-6 minutes until deep golden brown. Flip and cook for 3 minutes. Transfer chicken to a plate.
  4. Reduce heat to medium. Add halved potatoes cut-side down to the skillet. Cook for 4-5 minutes until starting to brown, stirring occasionally.
  5. Add trimmed green beans to the skillet. Stir together. Pour in chicken broth and scrape up any browned bits from the bottom of the pan.
  6. Nestle chicken thighs back into the skillet skin-side up. Spoon garlic butter mixture over the chicken. Sprinkle dried thyme over everything.
  7. Transfer skillet to preheated oven. Bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender.
  8. Remove from oven and let rest for 5 minutes. Garnish with fresh parsley if desired. Serve straight from the skillet.

Notes

Pat chicken dry for crispy skin. Don’t overcrowd the pan; sear in batches if needed. For thicker green beans, blanch in boiling water for 2 minutes before adding. Let butter come to room temperature for easy mixing. Check internal temperature with a meat thermometer for best results.
