  • ½ cup heavy cream
  • ¾ cup freshly grated Parmesan cheese (Parmigiano-Reggiano recommended)

  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 2 cloves garlic, minced

Instructions

  1. Season the chicken thighs. Pat them dry with paper towels. Sprinkle both sides evenly with salt, pepper, garlic powder, and onion powder. Let them sit at room temperature for about 10 minutes while you heat your skillet.
  2. Sear the chicken. Heat a large skillet over medium-high heat and add a drizzle of olive oil. Place the chicken thighs skin-side down in the hot pan. Do not crowd them—work in batches if needed. Let them cook without moving for 4-5 minutes until the skin is deep golden brown and crispy. Flip and cook for another 2 minutes on the other side.
  3. Transfer to the slow cooker. Place the seared chicken thighs in the bottom of your crockpot, skin-side up. They can overlap a little, but try to keep them in a single layer as much as possible.
  4. Make the sauce base. In a small bowl, whisk together the chicken broth, heavy cream, and minced garlic. Pour this mixture over the chicken thighs. The liquid should come about halfway up the sides of the chicken.
  5. Cook low and slow. Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The chicken is done when it pulls apart easily with a fork and the internal temperature reaches 165°F.
  6. Thicken the sauce. About 30 minutes before serving, carefully remove the chicken thighs to a plate and cover them with foil to keep warm. In a small bowl, whisk together the cornstarch and cold water until smooth. Pour this slurry into the slow cooker along with the butter and grated Parmesan. Stir gently until the butter melts and the cheese is fully incorporated. Let the sauce cook uncovered for 15-20 minutes, stirring occasionally, until it thickens to your liking.
  7. Return the chicken. Place the chicken thighs back into the thickened sauce. Spoon some of the sauce over the tops. Let everything warm through for another 5 minutes.
