This cozy persimmon walnut cinnamon bread is a moist, tender quick bread with sweet persimmon, crunchy toasted walnuts, and warm cinnamon. Perfect for fall baking, it comes together in about an hour and fifteen minutes and tastes even better the next day.

Ingredients

Scale
  • 2 cups ripe Fuyu persimmons, mashed (about 2–3 persimmons)
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup chopped walnuts, toasted (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the long sides.
  2. Wash and dry Fuyu persimmons. Cut off tops and blemishes, chop into chunks, and mash with a fork or potato masher until mostly smooth with a few small pieces. Set aside.
  3. In a large bowl, whisk together granulated sugar, brown sugar, and vegetable oil until well combined. Add eggs one at a time, whisking well after each. Stir in vanilla and mashed persimmons.
  4. In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (do not overmix).
  6. Fold in toasted walnuts. Reserve about ¼ cup for topping if desired.
  7. Pour batter into prepared loaf pan. Sprinkle reserved walnuts on top, pressing gently into batter.
  8. Bake for 55-65 minutes, until a toothpick inserted in center comes out clean. If top browns too quickly, tent with foil after 40 minutes.
  9. Cool in pan on a wire rack for 15 minutes, then lift out using parchment handles and cool completely on rack.

Notes

Use Fuyu persimmons, not Hachiya. Toast walnuts before adding for best flavor. Do not overmix batter. Let bread cool completely before slicing. Bread tastes even better on the second day.
