Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray; optionally line with parchment paper.
  2. In a large bowl, mash bananas with a fork until smooth. Add melted butter, 3/4 cup sugar, egg, and 1 teaspoon vanilla; whisk until combined.
  3. In a separate bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. Pour dry ingredients into wet mixture; fold with a rubber spatula until just combined (do not overmix). Batter will be thick and slightly lumpy.
  5. In a medium bowl, beat softened cream cheese with 1/4 cup sugar until smooth. Add egg yolk and 1/2 teaspoon vanilla; beat until fully incorporated.
  6. Pour half the banana batter into prepared pan. Spoon cream cheese mixture over batter, then top with remaining banana batter.
  7. Use a butter knife or skewer to create a figure-eight swirl pattern through the batter (6-8 passes).
  8. Bake for 55-65 minutes, until a toothpick inserted into the center (avoiding cream cheese pockets) comes out clean or with moist crumbs. Tent with foil if browning too quickly.
