  • 1 small sugar pumpkin or butternut squash, peeled, seeded, and cut into 1-inch cubes (about 3 cups)

  • 2 cups broccoli florets
  • 1 large red bell pepper, cut into 1-inch strips
  • 1 medium red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill
  • 1 teaspoon dried chives
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Prep the pumpkin or squash: Cut it in half, scoop out seeds and stringy bits, peel the skin, and cut the flesh into 1-inch cubes.
  3. In a large bowl, combine pumpkin cubes, baby carrots, broccoli florets, bell pepper strips, and red onion wedges. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  4. Spread the veggies in a single layer on the prepared baking sheet, leaving space between pieces.
  5. Roast for 20-25 minutes, stirring halfway through, until tender and golden-brown on the edges.
  6. While the veggies roast, make the herb ranch dip: In a medium bowl, combine sour cream, mayonnaise, dried parsley, dried dill, dried chives, garlic powder, onion powder, salt, pepper, and lemon juice. Whisk until smooth.
  7. Refrigerate the dip for at least 15-20 minutes to allow flavors to meld.
  8. Let the roasted veggies cool on the pan for 5 minutes, then transfer to a serving platter. Serve warm or at room temperature with the dip.

Notes

For best results, do not overcrowd the pan; use two sheets if needed. The dip can be made up to 3 days ahead. Veggies are best served within an hour of roasting but are also delicious at room temperature.
